Ingredients (Makes 4 Tacos):

Adobo Sauce Marinade:

  • 2 tablespoons canola oil
  • 3 cloves garlic, minced 
  • 1 cup water
  • 2 tablespoons tomato paste
  • 2-3 tablespoons adobo sauce (from a can of chipotle peppers) 
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • -1 tablespoon corn starch

Chicken Filling:

Shredded meat from 1 store-bought rotisserie chicken (about 2 cups)  

  • 1 white onion, diced
  • 1⁄4 cup fresh cilantro, chopped
  •  8 oz. shredded Mexican cheese blend
  • Corn tortillas 
  • Lime wedges (for serving)

Instructions For Cooking

1. Prepare the Adobo Marinade:

  • Heat oil in a small saucepan over medium heat. Add garlic and cook for 1 minute until fragrant. 
  • Whisk in water, tomato paste, adobo sauce, cumin, cinnamon, and cornstarch. Bring to a boil, then reduce heat and simmer for 5 minutes until thickened to a rich sauce consistency.
  • Reserve 1/3 of the sauce in a small bowl for frying the tacos later. 

2. Prepare the Chicken:  

  • Place shredded rotisserie chicken in a mixing bowl. Pour remaining 2/3 marinade over top and toss to coat thoroughly.
  • Let sit for at least 5 minutes for flavors to penetrate the chicken. 

3. Fry the Tacos:

  •  Heat 1 Tbsp canola oil in a medium skillet over medium heat.  
  • Working one at a time, dip corn tortillas in reserved adobo sauce, coating both sides. Add to a hot skillet and cook for 1 minute per side until crispy and brown.
  •  Immediately top the fried tortilla with a generous spoonful of chicken, cheese, onions, and cilantro. 
  • Fold the tortilla in half using a spatula, enclosing the fillings. Allow to rest for 1 minute before serving.
